Zero Waste Lunch from Bon Appetit

Our partners at Bon Appetit are preparing a deliciously zero-waste lunch for SZW18. Check out the Chef Notes below to see how the meal uses every part of each ingredient, from stem to root!

BBQ Pulled Carrots
Imperfectly Delicious carrots shredded and braised in a Carolina-style BBQ sauce then tossed with chopped green onions.

  • carrot and onion trimmings set aside to be roasted for stock
  • used in corn salsa, mole and hot sauce recipes

Coconut Lime Cauliflower
Baked cauliflower florets seasoned with coconut milk, lime juice, and roasted habanero peppers and garnished with watermelon radish and lime zest

  • cauliflower stems julienned and used in slaw
  • habaneros roasted whole and pureed
  • limes juiced and zested, remains to be used in stock for hot sauce recipe
  • radish trim used for pickled watermelon radish topping

Black Bean Mole
Black beans simmered in a rich chili and cacao mole sauce topped with chopped cilantro

Grilled Corn Salsa
Grilled corn, red onion, diced peppers, cilantro, roasted vegetable lime dressing

  • cob reduction to be used for corn stock in mole, BBQ, slaw and corn salsa recipes
